Ingredients:

- 1/2 bunch of Cilantro
- Olive Oil
- 2 Onions (of choice)
- 2 Sticks of Celery
- 1/2 Rotisserie Chicken
- 1 Tablespoon Cumin
- 1 Tablespoon Chili Powder
- 1 Pinch of Red Pepper
- 1 Can of Black Beans
- 1 Carton of Chicken Stock
- 1 Can of Corn (Brown in Pan)
- 1 Bay Leaf
- 1 Lemon
- Crumble Cheese

1st: Sautee’ Onions, Celery, Cilantro Stalks in Olive Oil
2nd: Add Black Beans (with juice, Chicken Stock, Corn (No Water)
3rd: Add Bay Leaf
4th: Bring to Boil (15 minutes)
5th: Add Shredded Chicken and cook for 10 minutes
6th: Toss in Cilantro Leaves, then add Lemon Juice
7th: Top your soup with Cilantro and Crumble Cheese
