Breakfast Ways to Start Your Day.

Ingredients:
- Bread (Sourdough, French, Sunflower Seed, any loaf will work)
- 4 Eggs (2 for hollandaise/ 2 for poaching)
- 12 or so asparagus sprigs (How much do you love Asparagus?)
- White Wine Vinegar (Rice Wine, White Vinegar or Lemon Juice will also work for this step)
- Stick of Butter
- Two Pots
- Two Pans
What’s Next?
Step 1: Start a pot of water on high heat and bring to boil. In another pot, toss in a stick of butter and allow to melt.
Step 2: While waiting on the pot to boil; separate two egg yolks and place in a glass bowl. Take a tablespoon of vinegar or lemon juice to mix in. Whisk together until creamy. Now place the bowl over a soft boil and continue to whisk. Slowly add in the stick of melted butter. This should turn very creamy; do not over heat!! Once all the butter is in, then remove it from the heat and add salt and pepper for taste.
Step 3: Cut Asparagus into halves and toss the stalks in to the boiling water. Let stalks boil for three minutes, then toss in the tree of the Asparagus and cook for another 45 seconds. Remove and set aside with a drizzle of Olive Oil and Sea Salt.
Step 4: Add two tablespoons of Vinegar to the boiling water and reduce the heat to low (this will turn the green water clear once again). Crack an egg at a time in a ladle and carefully drop it into the water. Cook for three minutes then remove eggs.
Step 5: Toast bread, add Asparagus, add Egg, then drizzle the Hollandaise over top.
