Veggies+Carbs=Soul Filler.

I know it is hard to believe, BUT from time to time I, myself like to create dishes in the kitchen. Recently, we endured another nasty day of sleet and snow so I decided to fight the chaos of Harris Teeter, grab different ingredients, and just go for it. This is a rather quick dish…

So without ado:

For the Veg of Comfort.

Ingredients:

  • Green, Yellow, & Red Peppers
  • Mushrooms
  • Carrots
  • Zucchini
  • Penne Noodles
  • Olive Oil
  • Garlic
  • Marinana Sauce (Homemade)
  • Parmesan Cheese

What’s Next:

1st: Chop and sort your veggies. Preheat oven to 400 degrees and turn burners on high. Add water to your pot and bring water to a boil before adding noodles.

2nd: Throw all peppers into frying pan and add hint of Olive Oil. Saute for 1-2 minutes.

3rd: Once water is at boil, then add Penne Noodles. Allow Penne noodles to boil for 10-11 minutes. If you are using Zucchini as noodles, then you can boil together or separate; however, remember that Zucchini Noodles boil in 5-7 minutes.

4th: Remove peppers and place in plate nearby. Add Carrots and Mushrooms to frying pan, then saute with Olive Oil, Garlic, Salt, and Pepper for 1-2 minutes.

5th: Butter the bottom of your deep dish pan. Once all noodles and vegetables are prepped, then begin layering in this order:

1st: Penne Noodles/ Zucchini Noodles

2nd: Peppers

3rd: Marinara Sauce (Sprinkle Parmesan Cheese)

4th: Carrots and Mushrooms

(Repeat Order)

6th: After layering your dish, then be sure to add Parmesan Cheese to top layer. Place dish in oven and leave for 20-22 minutes. If cheese is not completely melted by 20 minutes, then allow dish to sit for 3-5 more minutes.

7th: Remove the pasta from oven and allow to cool for 3 minutes. Recommended to add fresh Basil Leaves to top off your baked dish.
